Ingredients:
- Half boiled vegetables(cauliflower, potato, peas, beans, carrot) - 1 1/2 cups
- Onion - 1 small
- Tomato - 1
- Cardamom - 1
- Fennel seeds(sombu) - 1 tsp
- Cumin seeds - 1/2 tsp
- Pepper seeds - 1/4 tsp
- Cashew nut - 6
- Cloves - 2
- Coconut - 1/2 cup
- Garlic - 5
- Ginger - 1 inch piece
- Green Chilli - 6
- Garam masala powder - 1/2 tsp
- Coriander powder 1 tsp
- Salt - as required
- Oil - 2 tbsp
- Heat oil in a pan, add 1/2 tsp fennel seeds, cumin seeds, pepper seeds, cashewnut, cloves, ginger, garlic, green chillies and fry till aroma comes out.
- Finally add coconut and fry for a minute or two. Cool it down and grind to a smooth paste.
- Heat oil in a pan, add 1/2 tsp fennel seeds,cardamom and fry for a minute.
- Add chopped onion and cook till translucent.
- Add tomatoes and cook till it becomes mushy.
- Add the half cooked vegetables, garam masala powder, coriander powder and cook for a minute.
- Add the ground paste, salt, 1 cup water and give it boil.
- Garnish it with cilantro.
- Goes well with chapathi, roti and dosa.
