Vegetable Kurma


Ingredients:
  • Half boiled vegetables(cauliflower, potato, peas, beans, carrot) - 1 1/2 cups
  • Onion - 1 small
  • Tomato - 1
  • Cardamom - 1
  • Fennel seeds(sombu) - 1 tsp
  • Cumin seeds - 1/2 tsp
  • Pepper seeds - 1/4 tsp
  • Cashew nut - 6
  • Cloves - 2
  • Coconut - 1/2 cup
  • Garlic - 5
  • Ginger - 1 inch piece
  • Green Chilli - 6
  • Garam masala powder - 1/2 tsp
  • Coriander powder 1 tsp
  • Salt - as required
  • Oil - 2 tbsp
Method:
  1. Heat oil in a pan, add 1/2 tsp fennel seeds, cumin seeds, pepper seeds, cashewnut, cloves, ginger, garlic, green chillies and fry till aroma comes out.
  2. Finally add coconut and fry for a minute or two. Cool it down and grind to a smooth paste.
  3. Heat oil in a pan, add 1/2 tsp fennel seeds,cardamom and fry for a minute.
  4. Add chopped onion and cook till translucent.
  5. Add tomatoes and cook till it becomes mushy.
  6. Add the half cooked vegetables, garam masala powder, coriander powder and cook for a minute.
  7. Add the ground paste, salt, 1 cup water and give it boil.
  8. Garnish it with cilantro.
  9. Goes well with chapathi, roti and dosa.
